This week has been extremely busy for me. I have not cooked a dinner since Sunday night when I made the chicken noodle soup. Therefore, I do not have a new recipe attempt to share with you. However, I will share a recipe that has a lot of meaning to me. More so than anything I have ever made or ever will make. Ever since the first Christmas Eve I can remember, we would go to my paternal grandparents’ home for dinner and gifts. My grandmother would send home with every family her special cheese fudge. She has been passed on for five years now, and I have taken on the role of that tradition. It means a lot to me and I know that it makes others in the family smile. I did not like to eat it when I was younger because of its name “cheese” fudge. I have never liked cheese so I guess you could say I “stereotyped” the food because of its name. As many people do just that, quite often I am asked, “What exactly is cheese fudge? It doesn’t even sound good.” I love it and usually anyone who does try it loves it too.
I will start with all the ingredients you will need: 1 pound of Velveeta cheese, 1 pound unsalted butter, 4 pounds powdered sugar, a tablespoon of vanilla, and 1 cup of cocoa. I cut the cheese into cubes to make for easier melting. In a medium saucepan on low heat melt the butter and add the cubes of cheese stirring often. This is a timely process as you continue to melt the cheese until the butter and cheese mix into one another smoothly. If the cheese is stringy or has any chunks, it is not ready. While that is melting, in a large bowl sift the powdered sugar and cocoa together. Once the cheese is ready, add the vanilla, and proceed to pour the cheese mixture over the sugar and cocoa. Mix until everything is smooth and put into a large pan (11x13). Press until distributed evenly and put in the refrigerator to cool. This fudge will be best kept in a covered container in a cool area. It will become very soft if it is left sitting in warm temperatures. I truly hope you enjoy, do not let the name fool you.

ReplyDeleteThis is my first time visiting your blog, and I must say, I do enjoy the subject. I have never been much of a cook, but recently I have been searching for new meals to try out. What I have been specifically searching for are new lunch recipes. I am tired of the same old soup or sandwich for lunch. I have been looking for new meals or even creative variations of the common lunch meals. Do you have any good ideas in mind? I see you have listed a chili recipe. I might have to try that out!
Recently, I have been trying to eat a little more healthier. In the future, it could be a fun idea to do a healthy food theme! I know I would enjoy that.

DeleteI am not much of a lunch person but here are a few ideas that I do like when I make a lunch. One of them is using the lunch tortillas for wraps; there is a sundried tomato flavor that is good. You can use those to make any kind of wrap that you want with warm or cold meat. A fat free ranch with fajita chicken would be good. Sam’s has a bag of fajita chicken that I use for pita sandwiches, tacos, and wraps. However, since I am not much of a lunch maker, my favorite lunch is celery sticks and peanut butter. I like this because I get protein from the peanut butter and celery is a good fat burner. It burns over two times the calories to digest celery than what is in celery alone. I hope this helps you in finding something a little bit different.

ReplyDeleteOK I must admit the name doesn't sound good at all. Cheese & Fudge just don't seem like two things that should go together. However, after reading the ingredients, it sounds like it would be very tasty! I can't wait to mix up a batch of this to try it out!

The first thing I said when I read this title is, "Ewww". Stereotyping is so easy to do and hard to recognize some times. Although I still don't think I'd like it, it's different than I had expected and I would give it a taste. I'm not a big cheese or fudge fan but I've opened my horizens with food more now than I ever have. I'm trying not to be so picky. That was also a good idea to take over the family tradition. I'm sure it put a lot of smiles on a lot of faces, grandma being one. Keep up the good posts, I love reading them!
ReplyDeleteI have to say it is a good thing I read this blog after I have eaten dinner or else I would be running to make all of this at once. All of the recipies you have shared so far sound so good. I have to admit that cheese fudge sounds a little odd, but from your other recipies you have posted your taste seems to be similar to my own so I will give it a try. Thank you for all of the great ideas, this helps me a lot when I am stuck for something to make for dessert or dinner.
